Tomato Basil and Italian Sausage Skillet Dish

Our family changed our eating habits A LOT when I started to get serious about making health changes.
I used to bake homemade rolls and bread a few times a week! And while there's nothing wrong with any of those things, changing things up helped us eat more veggies and cut back on unnecessary carbs and fats in our diet.
This was a family fav typically eaten over bowtie pasta. Which is still SO GOOD! But this time, I wanted to try something different and discovered you could eat mixture over spaghetti squash, zoodles, with a baked sweet potato, or even by itself. 
1 lb. Italian Sausage 
1 onion, chopped 
2 cloves garlic, minced
1 can diced tomatoes
2 cups chopped baby spinach
1 cup chicken broth
1 tsp basil
salt and pepper to taste
Sauté sausage, onion and garlic together until sausage is cooked through. Add tomatoes, chicken broth and seasonings and allow to simmer together for 5 minutes. Add chopped spinach and stir gently until warmed through. 
Serve over zoodles, baked spaghetti squash, sweet potato, or complimentary side of your choice!
